Divine Cold Bowl Food – Spring and Summer 2017

Served from individual white rice bowls. We would suggest a selection of 3 items. All the main courses have a cold pasta/rice/noodle base.

Japanese teriyaki chicken salad with crunchy vegetables and a nam jim dressing
Breast of chicken tossed in a basil pesto with sun dried tomatoes and toasted pine kernels
Poached breast of chicken with a salad of asparagus, fine beans and avocado tossed in a lemon and coriander dressing
Pistou marinated chicken supremes on a bed of char-grilled Italian vegetables and pasta with a basil aioli
Middle Eastern chicken with za’atar and pomegranate molasses and baby herb salad

Thai style blackened salmon fillets marinated in lemon grass, ginger, kaffir lime leaves, garlic and chilli, with a coriander and lime mayonnaise
Cajun spiced salmon char grilled and served with lime mayonnaise
Char-grilled fillets of salmon drizzled with lime and served with a cucumber and horseradish cream
Sugar cured salmon with star anise, lemongrass and chillies,
served with crispy noodles and a citrus aioli
Seared salmon niçoise with a basil dressing with shavings of parmesan

Thai marinated salmon served with baby spinach leaves pickled pak choi and radishes

Smoked duck salad with caramelised red onions and fennel, honey roasted peaches and a sesame dressing
Crispy confit of duck on a bed of caramelised fennel, curly endive, red onion wedges and toasted sesame dressing
