City success with fresh burrata

 

Burrata
We were asked to provide canapes and hot and cold bowl food from a corridor and the tiniest of kitchens! We set to work to devise a menu fitting for the launch of a new contemporary art exhibition in the west end of London. The night was a huge success.

We served beautiful fresh burratta, the name “burrata” means “buttered” in Italian. Burrata is a fresh Italian cheese made from mozzarella and cream. The outer shell is solid mozzarella, while the inside contains both mozzarella and cream, giving it an unusual, soft texture. We marinaded the burrata in lemon, olive oil and fresh herbs and served it with oven-roasted baby tomatoes, rocket and a freshly-made basil pesto – simple but fresh, and it proved to be the most popular.

We also served Seared Beef with a Nicoise Styled Salad, Tuscan Chicken and Creamy Wild Mushroom Risotto with Crispy Sage. The evening was finished with a selection of Dessert Pots.
